This feels like a dumb question but -

Most my patches have insane amounts of delay, but I only see Reverb and FIlter knobs in the FX section. Is there a way to change the delay?

Am I blind?

I'm not sure if there is delay in synplant at all, but you may want to check that setting here with volume envelope:

Very often it creates that stutter effect.

Correct, there is no delay effect in Synplant, only a chorusing reverb and a distortion unit. The delay-like effects you can hear in many patches are all made with the envelope's looping function.
